- 300 grams potatoes
- 2 garlic cloves
- 1 onion
- 1 Tbsp olive oil
- 40 grams black Olives
- 1 Tbsp Basil (packed in olive oil, or pesto)
- salt
- freshly ground pepper
Preparation
1.
Peel potatoes and cook in boiling salted water for about 25 minutes. Peel and finely chop garlic and onions and saute in olive oil. Pit and finely chop olives.
2.
Drain potatoes and push through a ricer while still hot. Mix with onions, olives and basil, seasoning with salt and pepper.
