- 1 pc Cucumber (about 2" long)
- 1 Tbsp Japanese Plum butter
- 4 ozs pickled, yellow soybean
- 14 ozs Sushi rice
- 1 tsp Wasabi paste
- 2 roasted Nori seaweed

Preparation
1.
Rinse the cucumber, peel and cut into fine strips.
2.
Chop the edamame and mix with the plum butter.
3.
Cut the nori sheets crosswise. Cover with rice, wasabi paste, edamame and cucumber. Roll the sushi.
4.
Cut each sushi roll into 4 equal sized pieces.
