Mozzarella Skewers

- 2 Bell pepper (1 red, 1 yellow)
- 1 Zucchini
- 2 balls Mozzarella (about 4 oz)
- 16 green Olives (stuffed with almonds)
- 5 stalks Basil
- 1 tsp red peppercorns
- ½ tsp black peppercorns
- ½ lemon
- 1 tsp honey
- salt
- 2 tsps dried oregano
- 4 Tbsps vegetable stock
- 1 Tbsp olive oil
Halve bell peppers, remove seeds, rinse and cut into 3/4-inch pieces.
Rinse zucchini and cut into slices 1/2 inch thick.
Drain and dice mozzarella. Drain olives in a sieve.
Rinse basil, shake dry, pluck leaves and cut into fine strips.
Coarsely grind peppercorns and basil in a mortar. Alternate skewering bell peppers, zucchini, olives and mozzarella on 12 wooden skewers.
Cut lemon in half, squeeze, and measure 2-3 tablespoons of juice.
Mix lemon juice with honey, 3 tablespoons water, salt, oregano, olive oil and vegetable stock in a bowl. Drizzle mixture over skewers. Sprinkle skewers with basil and peppercorn mixture and serve.
