Marinated Salmon with Dill

- 1 tsp crushed peppercorns
- 3 Tbsps sugar
- 8 Tbsps Sea salt
- 50 grams Dill
- 1 Salmon (ready to cook, 700 grams)
- Dill flower (for garnishing)
Preparation

Grind peppercorns with sugar and salt in a mortar.

Rinse dill, shake dry and pluck off leaves, chop finely. Ad about half to spice mixture. Spread half of salt in a flat dish.

Rinse salmon, pat dry and place skin side down on salt. Spread remaining salt on salmon and press lightly. Cover with plastic wrap and refrigerate for 24 hours.

Before serving, remove salmon from marinade and rinse, pat dry.

Evenly sprinkle with remaining chopped dill, pressing lightly, and cut into thin slices. Garnish with dill flowers and serve.
