- 2 Limes (juiced)
- 4 Tbsps sunflower oil
- 1 tsp brown sugar
- 2 Tbsps White vinegar
- 3 Tbsps white wine
- 1 pc ginger (Size of a walnut)
- 1 chili pepper
- 1 garlic clove
- salt
- 1 ripe Mango
- 4 bunches various Fresh herbs ((e.g. mint, dill, basil, corian, chives)
Preparation
1.
Peel mango, cut in half, remove core and cut flesh into wide strips. Rinse herbs and pluck off the leaves. Peel ginger and garlic.

Cut chile peppers in half lengthwise, remove seeds and cut into fine strips. Coarsely chop ginger and garlic. Mix lime juice, oil, sugar, vinegar and wine into a vinaigrette.
3.
Add chile peppers, ginger and garlic to the vinaigrette. Season to taste with salt and sugar. Toss mango and herb mix with vinaigrette and serve.
