- 4 Tbsps Mayonnaise
- 1 tsp whole grain Mustard
- salt
- freshly ground peppers
- lemon juice
- 4 Tbsps mixed Sprout (of your choice)
- 4 slices Serrano ham
Preparation
1.
Boil the eggs in boiling water for about 8 minutes, drain, rinse with cold water, peel and let cool. Whisk together the mayonnaise, mustard, salt, pepper and a dash of lemon juice.

Rinse the sprouts in a colander and drain well.
3.
Wrap each egg in a slice of Serrano ham, place in an egg cup and top with a dollop of the mayonnaise mixture. Garnish with the sprouts and serve.
