Grilled Thai Fruit

- 4 stalks Lemongrass
- 1 pc fresh ginger
- 1 Lime
- 1 Tbsp honey
- 1 small Star fruit
- 8 Cape gooseberries
- ½ Papaya
- 4 ozs fresh Pineapple
Rinse lemongrass, trim and halve lengthwise. Peel ginger root and finely grate.
Rinse lime in hot water, wipe dry and peel off very thin strips of zest with a zester.
Squeeze out lime juice and mix the juice in a small bowl with the ginger and honey.
Rinse the star fruit, wipe dry and cut into slices. Remove gooseberries from husks, rinse and pat dry.
Cut pineapple into bite-sized pieces. Scoop out the seeds from the papaya half with a tablespoon, then peel papaya and cut into bite-sized pieces.
Line a baking sheet with parchment paper. Thread fruit pieces alternately on the lemongrass stalks, brush with lime-honey mix and place on the baking sheet.
Cook the fruit skewers under the preheated oven grill or broiler, or on a medium-hot outdoor grill, until fruit is browned around the edges, turning once. Sprinkle the skewers with lime strips and serve immediately.
