- 6 Anchovy fillet (in salt)
- 1 sprig fresh Lavender (stem removed)
- 3 Tbsps Caper
- 3 Tbsps toasted Pine nuts
- 3 ozs olive oil
- 1 Tbsp Cognac
- freshly ground peppers
Preparation
1.
Peel garlic and mash coarsely with olives, anchovies, lavender, capers, pine nuts and oil.

Season to taste with cognac and pepper. Transfer to a glass jar with a lid and store 2-3 weeks.
