Peel garlic, squeeze through the press, and mix with salt.

Combine the garlic with 2 tablespoons of the olive oil. Add pepper to taste and mix well. Sprinkle marinade on the chicken pieces and refrigerate, covered, for about 2 hours.

Heat the remaining olive oil in a pan, sauté the chicken pieces over medium heat until golden brown, about 20 minutes for the dark meat and 10 minutes for the breasts.
