Fresh Cheese Balls

- 1 Oak leaf lettuce (about 150 grams)
- 1 slice Whole Grain Rye Rolls (about 30 grams)
- 80 grams Cream cheese (13% fat)
- mixed-color peppercorns
- coarse salt
- 3 Tbsps Vegetable broth
- peppers
- 2 tsps mild White vinegar
Rinse lettuce, spin dry and cut into bite-sized pieces.
Cut bread into chunks, then finely grind in a blender or a food processor to make crumbs.
Mix half of the crumbs with the cheese in a small bowl and let stand for 5 minutes.
Coarsely crush the peppercorns in a mortar, then mix with the remaining crumbs and a pinch of salt. Place on a small plate.
Form the cheese mixture into 6 small balls with moistened hands, then roll in the breadcrumb mixture to coat.
Mix together the vegetable broth and the vinegar and season with salt and pepper. Toss the dressing with the lettuce in a bowl.
Divide salad between 2 plates, top with cheese balls and serve.

The cream cheese balls are also a nice eye-catcher on a buffet. Prepare more of them for guests and perhaps use a cream cheese with a slightly higher fat content.
