Endive Apple Salad with Gorgonzola

- 3 Endive (2 red / 1 white)
- 2 Apple
- 3 ½ ozs Gorgonzola
- 2 ozs Walnut
- 5 ozs Yogurt (low-fat)
- 1 tsp sharp Mustard
- 4 Tbsps lemon juice
- Sea salt

- 4 Whole wheat buns
Clean the endive, wash and divide into individual leaves, cut out the stalks. Wash apples, halve, core, cut into pieces. Crumble the cheese. Coarsely chop walnuts.
For the dressing, whisk together yogurt, mustard, lemon juice, salt and pepper. Mix endive leaves with apple pieces and walnuts and arrange in a salad bowl. Sprinkle cheese on top and serve dressing on the side. Serve with whole wheat rolls, if desired.

If the endive season is over or you do not like the slightly bitter taste, you can use another type of lettuce, for example, baby spinach, romaine, lamb's lettuce or frisée lettuce.
