- 500 grams waxy potatoes
- Vegetable fat (for frying)

Preparation

Rinse and dry the potatoes thoroughly. Cut into fine slices with the skin still attached. Rinse again and pat dry with kitchen paper.

Heat the fat in a wide saucepan or deep fryer. It is hot enough when small bubbles appear on a submerged wooden spoon.
Fry the potato slices for 2-3 minutes in a frying basket or a sieve. Do not allow them to brown. Remove from the fat and drain on absorbent paper.

Increase the temperature of the fat slightly and fry the potato slices again for about 2 minutes, until golden brown and crispy.
Remove, drain, season with salt and serve immediately.
