Preparation
1.

Preheat oven to 180°C (approximately 350°F). Rinse the chicken and pat dry. Rinse the lemons in hot water, quarter and place in the chicken. Rinse the herbs, shake dry, pluck the leaves and chop. Mix the herbs and oil. Season with salt and pepper. Rub the chicken with the herb mixture. 

Rinse the potatoes, cut into slices and mix in the remaining marinade.

Grease a roasting pan and add the chicken. Bake for 50 minutes. After 20 minutes, add the potatoes. Every now and then, sprinkle the chicken with the juices from the pan. Serve the chicken with potatoes, fresh sage and lemon wedges.
