Chinese Egg Noodles with Duck Breast

- 600 grams duck legs (2 pieces)
- 250 grams Chinese Egg noodle
- 4 Tbsps soy sauce
- 1 Tbsp honey
- ½ tsp Sambal oelek
- 1 red paprika
- 1 bunch scallions
- 2 Tbsps lemon juice
- salt
- 3 Tbsps vegetable oil
- 250 milliliters Chicken broth
- 2 Tbsps fresh cilantro (finely chopped)
- whole Coriander
Cook pasta according to instructions on the package, drain, rinse, then drain.
For marinade, mull honey, soy sauce and sambal oelek.
Cut duck breast into thin slices, put in the marinade and infuse 30 minutes.
Time pepper, rinse, cut in half, remove the seeds and ribs and cut into very thin strips.
Rinse scallions, cut the green in rings and cut the white and light green in fine julienne.
Remove the meat from the marinade and drain. Reserve marinade.
Sear duck breast on all sides briefly in hot wok with about 1 tablespoon of oil. Remove and add peppers and scallions into the wok, stirring in remaining oil and cooking until al dente. Season with salt and lemon juice. Pour in the broth and remaining marinade, mix in duck breast and noodles and bring to boil. Serve garnished with cilantro.
