Rinse chicken, pat dry and season with salt and pepper. Heat 1 teaspoon of oil in a nonstick pan and cook chicken, skin side down, for about 5 minutes or until golden brown, turn over and cook for another 4-5 minutes or until done.

Rinse and quarter tomatoes, remove seeds and cut into strips. Peel and halve onion, cut into thin wedges.

Whisk remaining oil with herbs and lemon juice, season with salt and pepper.

Cut chicken into slices and mix with onion, tomatoes and olives in a bowl. Crumble feta over and toss with the dressing. Serve with flatbread and tzatziki, if desired.
