Rinse, peel, core and chop apples into quarters. Rinse carrots well, pat dry and cut into small cubes. In 1 tablespoon oil, sauté without browning. Pour in water and simmer about 20 minutes. Stir in oil. Use an immersion blender to puree to a paste.
