Blackberry Yogurt Parfait
- Ingredients
- 9 ozs Blackberry
- 1 lb Vegan Yogurt (low-fat)
- liquid Sweetener (to taste)
- 4 Tbsps Shelled pistachio (about 2 oz.)
- 4 tsps honey
Rinse blackberries and put approximately 2/3 cup in a tall vessel.
Add half of the yogurt and puree with an immersion blender. Season to taste with sweetener.
Spread mixture into 4 glasses.
Sweeten remaining yogurt to taste with sweetener and pour into the glasses. Arrange remaining blackberries on top.
Chop pistachios coarsely and mix with honey. Sprinkle over parfaits and serve.
