Rinse the beetroot and steam about 50 minutes. Allow to cool slightly then peel. Mix with the olive oil, the apple cider vinegar, capers, honey and caraway and let cool to lukewarm. Season with salt and pepper.

Rinse the chives and dill, shake dry, pluck dill and cut the chives in 4-5 cm (2 inch) pieces. Toss the herbs into the salad just before serving and season.
