Beef and Veggie Pasta

- ½ lb Whole Grain Pasta
- 1 onion
- 1 garlic clove
- 1 lb button Mushroom
- 2 Bell pepper
- 2 tsps olive oil
- ½ lb Ground beef
- salt
- peppers
- cayenne pepper
- 0.6666 cup Goat cheese
- 1 bunch parsley
Cook the pasta according to the package instructions in plenty of salted water until al dente. Then drain and place to the side.
Meanwhile peel and chop the onion and garlic. Clean and chop the mushrooms. Clean, wash and cut the peppers into strips.
Heat 1 teaspoon of oil in a large pan and brown the meat on medium heat for 8 minutes, season with salt, pepper, cayenne pepper and remove from pan. Heat 1 tsp. oil in the same pan, and saute the onion and garlic over medium heat for 2 minutes.
Add the mushrooms and peppers to the pan and cook for 2 minutes or until vegetables are soft. Add meat, pasta and crumbled cheese, mix everything and cook for another 2 minutes to infuse flavor. Season the pan with salt and pepper as needed, Chop parsley and garnish the dish.

Veggie variation: about 1 cup cooked brown lentils are a good vegetable alternative. Simply cook 1/2 cup lentils for about 25-30 minutes in double the amount of water.
