- 2 Tbsps butter
- 200 grams Pearl barley
- 100 milliliters dry white wine
- 1 bay leaf
- 3 peppercorns
- 800 milliliters Vegetable broth
- 3 carrots
- 1 Parsnip
- 400 grams festkochende potatoes
- salt
- freshly ground peppers
- 2 Tbsps freshly chopped parsley
Preparation
1.
Peel onion and cut into small cubes. In a large saucepan, heat butter and saute onion until soft. Add barley, wine, broth and spices. Simmer for about 20 mintues on low heat.

Peel carrots, parsnip and potatoes,chop coarsely and add to the soup. Simmer for 20 minutes more. Remove spices, season with salt and pepper and serve sprinkled with parsley.
