- 4 Chicken breasts (about 120 g, or 1/4 pound)
- 80 grams dried Tomatoes (in oil)
- 125 grams Mozzarella
- 1 Tbsp freshly cut Basil
- 150 grams Hard cheese (sliced, such as Gruyère)
Preparation

Preheat oven to 200°C (approximately 400°F).

Rinse chicken breasts, pat dry and cut sides to form pockets. Drain tomatoes and chop. Cut mozzarella into small cubes. Mix with tomatoes and basil and season with salt and pepper. Stuff pockets with mixture and secure with kitchen strings. Place on a baking sheet lined with baking paper and bake for 15-20 minutes, or until golden brown.

Remove the kitchen strings and garnish with grated cheese to serve.
