Mix water in a pot with salt and butter, heat until butter has melted and then stir in flour. Remove pot from the heat, gradually add eggs and beat with a wooden spoon until a smooth dough forms.

Add half of cheese to the pot, mix well and season with salt. Pour mixture into a piping bag and pipe balls onto a baking sheet lined with parchment paper, leaving enough distance between balls.

Bake in a preheated oven at 180°C (350°F) for 10 minutes until golden brown, remove from the oven, brush with beaten egg and sprinkle with remaining cheese, bake again for 5 minutes. Let cool slightly and then serve.
