- 400 grams very fresh Arctic Char (skinless)
- 1 red Apple
- 2 Tbsps grapeseed oil
- 1 Tbsp lemon juice
- ½ bunch Cress
- 1 generous pinch Wasabi paste
- ½ tsp honey
- salt
Preparation
1.
Crush the pepper in a mortar. Rinse and dry the char. Cut into small cubes, and place in a bowl with the pepper. Rinse, quarter, remove the core, and dice the apples into small cubes. Add with the lemon juice and the oil to the fish. Cut the cress, and save a little for garnish. Mix into the bowl, and season to taste with the wasabi, honey, and salt.

Using a ring mold, add the tartare to plates, and garnish with the watercress.

Serve with potato chips, if you'd like.
