- 50 grams white Mustard seed
- 50 grams black Mustard seed
- 1 onion
- 1 garlic clove
- 1 tsp Coriander
- 1 bay leaf
- 2 cloves
- 100 milliliters Wine vinegar
- 1 tsp salt
- 2 Tbsps honey
- 200 grams dried Apricot
Preparation

Add the mustard seeds to a bowl. Peel and finely dice the onion and garlic. Bring the onion, garlic, 125 ml (approximately 4 ounces) of water, coriander seeds, bay leaf, cloves, vinegar, salt, and honey to a boil. Pass through a fine strainer over the mustard seeds, and let infuse for 2-3 days.

Finely dice the apricots. Puree the apricots in a blender with a little water. Mix the puree into the mustard, then pour into jars. Seal tightly then store in a cool, dark place for at least 1 week.
