Apple-lamb Stew with Chickpeas and Cinnamon

2 Apple
750 grams lamb (from the leg)
2 Tbsps vegetable oil (or ghee)
salt
peppers
1 pc cinnamon (2 cm long)
500 milliliters Cider
100 milliliters Whipped cream
2 tsps rich Broth
250 grams chickpeas (canned)
cilantro (to taste, for garnish)

Preparation

Peel the onions and chop finely. Peel, core and dice the apple into small cubes. Rinse lamb, pat dry and cut into bite-sized pieces.

Heat the oil in a wide saucepan. Brown the lamb over high heat amd season with salt and pepper. Add onion and the apple cubes and fry 1 minute. Add cinnamon stick and the cider. Cover and cook over medium to medium-high heat for 40 minutes. Stir in cream and the broth. Cover and simmer until the meat is soft, another 20 minutes.

Drain chickpeas in a colander, rinse in cold water and allow to drain briefly. Mix into the stew and cook for 5 minutes. Season with salt and pepper and pour into soup plates. Garnish to taste with cilantro.
