Apple Celery Soup

- 14 ozs Celery root
- 6 ozs starchy potatoes
- 1 shallot
- 2 small, red Apple
- 3 Tbsps butter
- 3 ½ ozs Cider
- 20 ozs Vegetable broth
- 7 ozs Whipped cream
- salt
- freshly ground peppers
- lemon juice
- 1 stalk Celery
- 1 Tbsp powdered sugar
- 1 Tbsp grapeseed oil
Peel celery, potatoes, shallot and one apple, core apple and dice all ingredients. Heat 2 tablespoons of butter in a saucepan and saute shallot for a few minutes. Add the rest of diced ingredients and saute briefly. Deglaze pan with wine and simmer for a few minutes. Add broth and cream, season with salt and peper and simmer for about 20 minutes on medium heat. Puree soup finely and season with a dash of lemon juice.
Rinse celery and slice thinly. Rinse remaining apple, core and dice into small cubes.
Heat remaining butter in a pan and saute celery and apple for a few minutes, sprinkle with powdered sugar and caramelize lightly.
Pour soup into bowls and garnish with stewed apple and celery. Drizzle with a little oil and serve.

If you want to reduce the fructose levels in this soup, replace the apple juice with vegetable stock.
