Ingredients

For the pear confit
2 Pear
2 Tbsps lemon juice
30 grams sugar
1 Star anise
40 milliliters dry white wine
For the ginger ice cream
10 grams ginger
50 grams candied ginger
20 grams honey
300 grams Yogurt (0.1% fat)
150 milliliters Whipped cream

Preparation steps

For the pear confit: Rinse, peel, core and cut the pears into small pieces and sprinkle with the lemon juice. In a saucepan, caramelize the sugar with the star anise. Add the pears and mix with the caramel. Add the white wine and simmer until softened, about  5 minutes. Remove from the heat and let cool completely.

For the ginger ice cream: Peel and finely grate the fresh ginger. Finely chop the candied ginger. Stir together the fresh and candied ginger, the honey and the yogurt. Beat the cream until stiff and fold into the yogurt mixture. Scrape the mixture into a flat metal container and freeze  4 hours, vigorously stirring every 30 minutes to prevent large ice crystals from forming. Or, process in an ice cream machine according to the manufacturers' directions.

Serve scoops of ice cream with pear confit.
