Yogurt and Apricot Parfaits
Drain apricots. Set 4 apricot halves aside and cut the rest into small cubes. In a pan, cook sugar until golden. Add chopped apricots and cook until caramelized, stirring. Stir in orange zest. Transfer to a large mixing bowl and mash.
Mix quark with yogurt, sugar and vanilla sugar. Layer quark mixture and apricot puree in glasses. Garnish with reserved apricots and mint.
