- 2 cups caster sugar
- ⅛ tsp cream of tartar
- ⅔ cup water
- 4 Tbsps undiluted strawberry cordial
Preparation steps
1.
Grease heart-shaped lollipop moulds and insert lollipop sticks. Sprinkle a few sugar strands and hearts into each mould. Line 2 large baking trays with non-stick baking paper and place lollipop sticks spaced apart on the trays.

Place the sugar, cream of tartar and water in a heavy-based pan over a low heat until the sugar has dissolved. Bring to a boil, stirring all the time.

Reduce the heat to low and simmer for 20 minutes without stirring. Carefully stir in the cordial and simmer for a further 5-8 minutes, until 143°C|290°F on a sugar thermometer.

Remove from the heat and working quickly, spoon small pools of the syrup onto one end of each lollipop stick and quickly sprinkle with sugar strands and hearts. Pour the syrup into the moulds. Sprinkle with sugar strands and hearts.
5.
Leave to set for 5-10 minutes.
