Wild Greens Salad with Fried Sausage

- For the vinaigrette
- ½ tsp salt
- 1 pinch sugar
- 1 tsp chopped thyme
- 1 tsp chopped Stinging nettle
- 1 Tbsp White vinegar
- 1 Tbsp Tarragon vinegar
- 4 Tbsps olive oil
- also
- 4 Sausage
- 2 Tbsps vegetable oil
Preparation

Rinse and dry wild greens and radicchio leaves. To make vinaigrette, whisk together all ingredients. Halve sausages and sear in hot oil until browned. Remove from pan and thread 2 halves onto each wooden skewer.

Toss wild greens and radicchio with vinaigrette. Divide salad among plates and garnish with sausage skewers.
