2 Veal cutlets
1 organic lemon (zested)
1 tsp peppercorns
150 grams clarified butter
1 egg
8 Tbsps breadcrumbs
3 Tbsps Pastry flour

Preparation steps

1.

Pound the cutlets flat with a mallet. 

2.

Season to taste with lemon zest and crushed pepper.

3.

Place the flour, breadcrumbs and the beaten eggs in separate shallow bowls.

4.

First coat the cutlets in flour, then dip in the eggs.

5.

Coat in the breadcrumbs and press to coat. If not enough breading sticks to the cutlets, coat again in the eggs and breadcrumbs.

6.

Heat the clarified butter in a deep frying pan and fry the cutlets on both sides until golden brown.

7.

Drain on paper towels and serve while still hot on plates with lemon wedges.
