1.333 cups dried White bean (soaked overnight)
2 shallots (finely diced)
1 clove garlic cloves (finely diced)
2 scallions (in rings)
6 Tbsps olive oil
8 slices Baguette

Preparation steps

1.
Drain the beans, cover with fresh water and boil for around 45 minutes until cooked.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
3.
Sweat the shallots, garlic and spring onions in 2 tbsp of oil until translucent. Drain the beans and allow to cool slightly. Purée them with 1 - 2 tbsp oil. Add the onion mixture and season to taste with salt and ground black pepper.
4.
Bake the baguette slices for around 5 minutes until crispy on both sides. Remove from the oven and drizzle with the remaining oil. Spread with the bean paste and serve.
