- 2 tsps good-quality olive oil
- 2 shallots (finely diced)
- 2 cloves garlic cloves (finely minced)
- 6 cups Chicken broth
- 2 cups canned White bean (cannellini)
- 1 tsp rosemary
- freshly ground Black pepper (to taste)
- 2 cups cooked Chicken breasts (roughly cut)
- ⅔ cup Elbow macaroni (shells)
- 8 ozs fresh Green beans (trimmed)
- 3 cups cherry Tomatoes (rinsed; stems removed)
- 3 cups baby Spinach (rinsed and trimmed)
- crusty Bread (optional)

Preparation steps
1.
In a large soup pot, heat the oil over medium heat and saute the shallots until tender, about 5 minutes. Add garlic and saute for an additional minute until fragrant.
2.
Add broth, white beans and rosemary to pot; season with black pepper. Bring to boil.
3.
Add chicken, pasta and green beans, and simmer for 6 minutes. Add cherry tomatoes and spinach and simmer until spinach wilts and tomato skins begin to split, about 4 minutes.
4.
Ladle into individual soup bowls. Serve with crusty bread, if desired.
