- For the asparagus
- 2 bunches white Asparagus
- 2 Tbsps butter
- 2 tsps salt
- 2 Tbsps lemon juice
- 2 tsps sugar
- 400 grams Snow peas
- For the pork medallions
- 700 grams Pork tenderloin
- 2 Tbsps clarified butter
- 4 Tbsps breadcrumbs
- salt
- peppers
Preparation steps

For the asparagus, rinse the asparagus thoroughly, peel and cut off the ends. Bring 3 liters (approximately 12 1/2 cups) of water with butter, salt, lemon juice and sugar to a boil and cook the asparagus for about 25 minutes. Let simmer. Rinse the snow peas, cut off the ends, and cook in boiling salted water for about 2 minutes.

For the pork, remove the skin and tendons and cut into 12 medallions.

Melt the butter in a pan, cook the pork medallions on each side for about 3-4 minutes and season with salt and pepper. Serve the asparagus with snow peas and pork medallions on plates and drizzle with melted butter to taste.
