Watermelon-Strawberry Gazpacho

- 4 ozs Watermelon
- 10 ozs Strawberries
- ½ Cucumber
- 1 onion
- 10 ozs Natural yogurt
- ½ lemon (juice)
- salt
- freshly ground peppers
- honey
- mint (for garnish)
Remove the seeds of the watermelon and the flesh into cubes.
Rinse and hull the strawberries, cut into wedges and set 4 tablespoons aside.
Peel and dice the cucumber. Peel the onion and chop.
In a blender, finely chop the fruit with the vegetables, lemon and yogurt and season with salt, pepper and honey. Refrigerate until very cold, at least 1 hour. Pour into glasses and serve garnished with the reserved strawberries and mint.

Watermelon is rich in potassium, which regulates the water balance in our body. It also contains lycopene, a secondary plant substance that protects our cells from free radicals and thus reduces the risk of cancer.

For an extra portion of protein, you can also prepare the cold strawberry-cucumber soup with about 250 grams of low-fat curd cheese or Skyr. An equally delicious variation of gazpacho is to use blueberries instead of strawberries.
