Preparation

Mix the watermelon with the lemon juice, lemon zest, and jam sugar. Cover, and set aside for 4 hours. Add to a saucepan, and bring to a boil. Boil for 4 minutes.

Divide into prepared jars, seal tightly, and cool completely.
