Preparation

Rinse the peppers, remove the seeds, and coarsely chop. Puree with the herbs, lemon juice, and vegetable broth.

Pass through a fine strainer, season to taste with pepper, and mix with the mineral water. Divide into glasses, garnish with the herbs and cucumber, and serve.
