- 1 bunch scallions
- 250 grams white button Mushroom
- 1 Tbsp olive oil
- 1 l Vegetable broth
- 1 tsp lemon juice
- salt
- freshly ground pepper
- 1 bunch parsley
Preparation

Peel carrots and cut into strips. Rinse scallions, trim and cut into strips. Clean mushrooms and slice.

Heat olive oil. Saute mushrooms, carrots and scallions for 2 to 3 minutes. Pour in broth and simmer for 6 to 8 minutes. Season with lemon juice, salt and pepper. Rinse parsley, shake dry and chop finely. Add parsley to broth prior to serving.
