- 14 ozs cherry Tomatoes (thickly sliced)
- 1 day-old, crusty Bread (torn into chunks)
- 1 Cucumber (skinned, deseeded, cut into chunks)
- ½ Red onion (thinly sliced)
- 1 Tbsp Basil (torn into pieces)
- 2 ozs Caper (rinsed and drained)
- 2 Tbsps Red wine vinegar
- ½ cup extra virgin olive oil
- salt
- freshly ground Black pepper
- To garnish
- parsley
Preparation steps

Mix together all the ingredients in a bowl. Cover and marinate at room temperature for at least 1 hour and up to 12 hours. Do not refrigerate.
