- 3 Red Bell pepper
- 300 grams Cherry tomatoes
- 1 parsley
- 1 Basil
- 2 Mozzarella (about 125 grams)
- 1 Red onion
- 3 Tbsps White vinegar
- 1 tsp sugar
- 50 milliliters olive oil
- salt
- freshly ground peppers
- 80 grams black Olives
- 4 slices white bread (sliced thickly)
- 30 grams butter

Preparation steps
1.
Rinse and halve bell peppers, remove seeds and ribs, cut into strips. Rinse and dry cherry tomatoes. Rinse herbs and shake dry, chop parsley. Dice mozzarella. Peel onion and cut into thin rings.

Whisk white wine vinegar, sugar and olive oil, season with salt and pepper. Toss in a a bowl with peppers, tomatoes, parsley, mozzarella, onion and olives.

Dice white bread. Heat butter in a pan and toast bread cubes until golden brown. Season with salt and pepper. Combine bread cubes with salad and garnish with basil. Serve immediately.
