- 400 grams green Beans
- 400 grams wide wax beans
- 4 sprigs Savory
- Sea salt
- 1 mild onion
- 3 Tbsps White vinegar
- 1 Tbsp lemon juice
- 6 Tbsps olive oil
- 3 Tbsps scallions
- 2 Tbsps freshly chopped parsley
- freshly ground peppers
- sugar
- 4 very fresh Tuna steak (each 150 grams)

Preparation steps

Rinse beans, snip the ends and cut diagonally into 4 cm (approximately 1 1/2-inch) long pieces. Blanch in boiling salted water along with 3 branches savory until al dente, 6-8 minutes. Then drain, rinse with cold water and drain well.

Peel onion and finely chop. Chop the remaining savory. Mix both with the vinegar, lemon juice, 4 tablespoons oil and remaining herbs. Season with salt, pepper and sugar. Rinse the tuna, pat dry and season with salt. Sear in a hot grill pan in the remaining oil on each side for about 1 minute. Remove from pan and cut into cubes. Mix beans with tuna and dressing in a bowl. Season with salt and pepper and spread on plates. Serve with baguette, if desired.
