350 grams Tagliatelle
50 grams fresh black Truffle
80 grams butter
salt
freshly ground peppers
40 grams freshly grated Parmesan
2 Tbsps chopped scallions

Preparation steps

1.

Cook pasta in plenty of boiling salted water until al dente.

2.

Rub clean truffles and cut into fine strips. Finely chop half of the strips.

3.

Drain the pasta, setting aside 1/2 cup of pasta water.

4.

Mix together the pasta with the butter, chopped truffles and the pasta water and season with salt and pepper.

5.

Serve on warmed plates and garnish with truffle strips and scallions.
