- 2 carrots
- 200 grams Celery root
- 2 stalks Leeks
- 2 Tbsps butter
- 1 l Beef broth
- salt
- Freshly ground peppers
- 250 grams Tortellini with meat filling
- 2 Tbsps scallions
Preparation
1.
Peel onion and chop finely.

Peel carrots and celery and cut into thin sticks. Rinse leeks and cut into rings.

Sauté onion in a pan with butter. Add other vegetables and sauté briefly. Add broth and simmer for about 15 minutes in an uncovered pot.
4.
Season with salt and pepper to taste. Add tortellini and cook for about 6 minutes until done. Prior to serving, sprinkle with chopped chives.
