800 grams Tomatoes
1 onion
1 garlic clove
3 Tbsps olive oil
1 Tbsp Tomato paste
100 milliliters dry white wine
400 milliliters Vegetable broth
2 slices white bread
salt
peppers
1 splash lemon juice
1 pinch sugar

Preparation steps

Rinse tomatoes, cut out stalks and dice tomatoes coarsely. Peel and dice onion and garlic. Heat 1 tablespoon of oil in a saucepan and saute onion and garlic until soft. Add tomato paste and wine and simmer briefly. Add tomatoes and broth. Simmer, stirring occasionally, for about 30 minutes or until creamy. Add more broth if needed.

Cut bread into cubes. Heat remaining oil in a pan and saute bread cubes until golden brown and crispy. Drain on paper towels.

Puree soup, if necessary. Season with salt, pepper, lemon juice and sugar and pour into bowls. Sprinkle with croutons and serve.
