- 6 ripe Tomatoes
- 1 handful fresh Basil
- 3 Tbsps olive oil
- 1 tsp lemon juice
- Sea salt
- freshly ground peppers
- sugar
- 120 grams cream cheese

Preparation
1.
Rinse, core and cut tomatoes into small pieces. Rinse basil, shake dry and chop.

Mix tomatoes and basil with olive oil and lemon juice. Season with salt, pepper and a pinch of sugar. Stir cream cheese until smooth and spread on the rice crackers.
3.
Top crackers with tomato-basil mixture. Season with freshly ground coarse sea salt and pepper. Garnish with basil.
