Tomato Mozzarella Flatbread
Thaw the puff pastry. Rinse the tomatoes and cut into large pieces. Stack the sheets on top of each other and roll out thinly. Grease a baking sheet and line with the puff pastry. Fold over the edges to form a rim of dough. Prick the bottom with a fork several times. Spread the tomatoes over the dough and season with salt and pepper. Cut the mozzarella into thin slices and place on the dough. Bake in an oven at 180°C (approximately 350°F) for about 20-25 minutes.
Rinse the basil, and shake dry. Cut into strips and distribute over the cake before serving.
