2 Tbsps olive oil
4 sprigs thyme
1 sprig rosemary
1 bay leaf
4 white peppercorns
1 pinch sugar

600 milliliters Beef broth (or vegetable broth)

Preparation steps

Rinse the tomatoes and cut into quarters. Rinse and slice the celery. Peel and chop the shallot. Heat the olive oil in a large pan and sauté the shallot and celery until softened. Add the tomatoes, herbs, white peppercorns, sugar and salt and mix well. Stir in the beef broth, cover and simmer for about 45 minutes. Strain the soup through a fine-mesh sieve lined with cheesecloth.

Ladle the soup into mugs or bowls and serve with tomato jelly, fresh basil and zucchini cubes.
