½ Loaf of bread (sliced into 1 inch thick slices)
cup olive oil
2 salad Tomatoes (diced)
½ cup Arugula
salt
peppers

Preparation steps

1.
Pre-heat the grill to hot.
2.
Brush the slices of bread with the olive oil using a pastry brush. Toast under the grill for 3-4 minutes on both sides until golden brown. Remove and reserve.
3.
Grill the bacon for 3-4 minutes on both sides until golden and crispy. Remove and arrange the bacon on the toasted bread.
4.
Top with the tomato and then season a little. Flash under the grill for a further 1-2 minutes, remove and top with the rocket. Serve immediately.
