- 600 grams Tofu
- 500 milliliters vegetable oil (for frying)
- 250 grams fresh Spinach
- 2 centimeters fresh ginger
- 2 Tbsps sesame oil
- 200 milliliters Vegetable broth
- 2 Tbsps Oyster sauce
- dark soy sauce
- freshly ground peppers
- 1 tsp cornstarch
- 350 grams Bamboo shoots (from a jar)

Preparation steps

Cut the tofu into bite-sized pieces and fry until golden brown in hot oil. Remove with a slotted spoon and set aside. Rinse and trim the spinach and spin dry. Peel the ginger, grate finely and fry in a wok with hot oil. Add the spinach and deglaze with the vegetable broth and oyster sauce.

Season with soy sauce and pepper, bring to a boil and thicken with the cornstarch mixed in a small amount of cold water. Add the tofu and well-drained bamboo shoots. Heat through and season again if needed. Distribute on warmed plates and serve.
