Toasties with Ham, Carrots and Sour Cream
Toast the pine nuts in a dry skillet until fragrant and lightly browned. Remove and let cool.
Rinse the chives, shake dry and cut into 1-2 cm long rolls (approximately 1/2 - 1 inch). Peel the carrot and finely grate. Peel the onion and cut into rings.
Season the sour cream with salt, pepper and lemon juice.
Halve the toasties and crisp up in the toaster. Spread each with 2 tablespoons of sour cream and top with carrots, ham and onion rings. Shower with chives and pine nuts and serve with the remaining sour cream.
